The idea caught my attention, so I took a trip to Niwot, a small town just outside Boulder, Colorado.
From fresh sushi to carefully crafted Sunday-only ramen, this cozy Niwot spot truly has it all. Warm, welcoming, and full of local charm, it’s definitely worth a visit.
20 Years of Sushi at the Heart of the Community
Niwot Market is a local family-owned small business, known for its warmth and community spirit.
Located inside Niwot Market, SACHI SUSHI is proudly celebrating its 20th year.
The owner, Tsukasa, was drawn to Boulder’s welcoming atmosphere and beautiful natural surroundings, and he has been living in Colorado for over 40 years.
“People here respect each other’s differences, which makes it a friendly and inviting place. It was easy to make friends,” he said, describing what makes this community so special.
Tsukasa named the restaurant “SACHI,” meaning ‘happiness,’ after the name he had wished to give his child.
With that special meaning, the sushi spot has been cherished by the local community for 20 years.
Sunday Ramen You Can’t Miss
The restaurant’s carefully crafted ramen started about 15 years ago.
It’s only available on Sundays due to the time-intensive preparation and the limited stove space inside the market.
The pork-bone broth is simmered for 12 hours and comes in three flavors: soy sauce, salt, and spicy miso. Rich yet smooth, it’s so delicious you’ll want to savor every last drop.
The noodles are medium-thin, perfectly soaking up the broth. Toppings include melt-in-your-mouth chashu pork and perfectly soft-boiled eggs, creating a balanced and authentic ramen experience.

Tsukasa once dreamed of running a fish shop, and that passion lives on in his sushi, every bite shows his devotion.
I also enjoyed “Battera” (pressed mackerel sushi) alongside the ramen.
The thick, perfectly seasoned mackerel was full of flavor, making the combo with ramen a true treat.
SACHI SUSHI is a place filled with warmth that naturally makes you feel at home.

We travel an hour to get to this ramen on Sundays. Love this very casual setting in a small but terrific market in Niwot. The food is what you go for!
